Open Question: Recipe for Vietnamese Chargrilled Pork (Bun Thit Nuong)?

Does anyone know how to prepare this dish? (just the meat part) I have tried the obvious route, marinating the meat(pork shoulder) in a sugar, fish sauce, soy sauce, salt, black pepper and then char-grilling it. But it still wasn't like the what you get in good vietnamese restaurants. Mine was too tough and dry and didn't have that dark carmel color or intense flavor that I wanted. It seems like most other recipes for it online are written by inexperienced amateurs. I would really appreciate some pointers. Thanks =) more

Open Question: Does anyone know of a good diet cookbook?

My husband is seeing a doctor for high blood pressure. His doctor wants him to lose weight and exercise. He has been exercising 3 to 4 times a week and is trying to limit calories. He went to see a nutritionist/dietitian today. It was a total waste of time and money. All she could recommend is what a diet book that my husband has been using already. Cut out certain foods and exercise, which my husband was already doing. She said to limit sodium intake also. This is information that I already knew as a former nurse aide. I also have been trying to lose weight, but my problem is related to hormone changes. My husband's mother had a thyroid problem and couldn't lose weight. She saw dietitians, joined weight watchers with no success. Her family doctor found out that her metabolism was out of whack. This is why she couldn't lose the weight. She was given medication and she started losing weight. I'm thinking this is what the problem might be with my husband. Sometimes the problem can be organic in nature. We are going to really try to stick with the diet from the book. My husband lost 20 pounds 3 years ago. However, I would like to find a good cookbook with tasty meals that are fast and easy. I like to cook but I don't like the mess of cooking. I have a very tiny kitchen with absolutely no counter space. A stove that is 30+ years old and only 2 of the burners work. So if I do cook it has to be a one pan recipe. My husband doesn't like tomatoes at all. I can't eat cabbage, nuts, pork because I'm allergic to all of these items. He loves cabbage, nuts, pork. He's almost 100% German ancestry. I'm almost 90% English/Irish ancestry. So he doesn't like what I make and I really can't eat what he likes. The dietitian said that corn is a starch and shouldn't be used much. I grew up on a large farm and thought corn was extremely healthy and rich in vitamins. I really didn't care for her ideas on food much. Can anyone please recommend a healthy cookbook? Thanks. more

Open Question: What are your favorite cheating recipes?

Let clarify that I'm talking about food here, not marital infidelity--lol. A cheat recipe is a culinary shortcut. You take a pre-made or boxed item and modify it to make it your own. Thus, you can save time and "dress up" the generic item with good ingredients and flavor that wasn't in the original, maybe even fooling your family or guests into thinking that you cooked from scratch. Adding wine and spices to store bought tomato sauce is one example. What are your favorite quick and tasty cheat recipes? more

Open Question: Is there a website that lists recipes containing ingredients you have?

I was just looking through my cupboards for stuff to eat; I have nothing promising, but plenty of stuff that looks like it could go into making something really good. The trouble is, I have no idea what might possibly be made from the ingredients I have. Is there a website that allows you to tell it what stuff you have lying around your house, then gives you recipes that use that stuff?
